Add deployment support for `holesky` testnet

For better interoperability with testnets, it'd be nice to have support with holesky. Currently the existing packages.json only has Ethereum testnet support for goerli and sepolia. Since goerli has been recently deprecated it should also be removed from the repo entirely.
