[Enhancement] Update Date Time format to an easier version

Current Implementation

Currently, user input for date and times are in the format YYYY-MM-ddTHH:mm. This format is not natural to the layperson and difficult to type out.

Possible Enhancements

Change to user format to:
dd/MM/yyyy HH:mm
