Document the new essence validation syntax.

The essence validation syntax has changed without documenting it.
We should fix that.
@robinboening could you please update the essence validation guides.
That would be really great 🎉

I think there is no missing guide where we mention it. I close this issue for now - if you know a missing spot feel free to open it again.

Maybe we could also update the upgrade guide?
Although the rake alchemy:upgrade task prints the changes, we could mention the new validation syntax at the bottom?
