Docker instructions need a refresh

Kitematic no longer seems to be supported (there's the Docker dashboard now on Mac)! That means our Docker instructions are out of date. I made an attempt to update the Docker instructions specifically for usage after the workshop in AlexsLemonade/2021-march-training#27. Those may not go in, but wanted to link here as a starting point. It's unclear if how we used Docker during in person workshops will continue, but if so, those instructions will also be out of date. If we continue to use RStudio Server in person, we can transition to talking about using Docker post-workshop in the in person material as well.
I am going to remove this from the current Epic. With #73, I revised the page that's relevant to virtual trainings but left docker-install, which means our Docker instructions still need a refresh.
