Upgrade to Tailwind 3

We should upgrade to Tailwind 2 3 to benefit from its built-in dark mode support, among other things. I started looking into it in https://github.com/Calinou/godot-asset-library-laravel/tree/update-to-tailwind-2 but I haven't succeeded yet.
