I believe they use their own SF Mono font.
Our syntax highlighting looks pretty gross in comparison to Xcode.

On the subject of themes, each theme will be required to have a light mode and a dark mode which will respond to the users light/dark mode setting. We will have a setting to use the themes background, or use the standard window background which is tinted by your wallpaper. On that note, see #46.
