Look into updating Pehkui dependency to avoid JitPack issues

Pehkui 3.6.0 seems to periodically disappear from JitPack for some reason. Newer versions (at least 3.6.1) don't seem to have this issue, so maybe we could just update the dependency version?

We recently had this issue with a newer version as well. I think it's just a general JitPack issue, not specifically with this dependency version.
