Improve development/demo scripts

Ensure that the demo and development scripts provide a reasonable experience on the latest Ubuntu and GNOME, and that they clean up after themselves without the demonstrator needing to kill things manually.

Problems:

• Closing the application window results in an error in the demo.sh script
• Processes living longer than they should, requiring manual termination via kill
