`/count` API was not included in the API Removals Section of the upgrading doc

Context
In https://docs.graylog.org/en/4.0/pages/upgrade/graylog-4.0.html#api-endpoint-removals, we should have expanded on what's present in the changelog:
As it stands, the /count API removal seems to have been missed, without a corresponding equivalent.
