In some other software (e.g. Pymupdf) there is a sanitization option to remove hidden text.
There are a couple of example files at https://bugs.ghostscript.com/show_bug.cgi?id=706032
One has hidden text added to a scanned PDF by OCR, the other has hidden text created by CAD software to make a pdf searchable while drawing visible vectorised text.
