Not sure who this should be (Kirstie?) but we need to make sure email notifications are set up from google drive!

Ok - currently this is me - easy to do from within the google sheets file (not the form itself - there aren't any options there which threw me for a while).
Going forwards I might need to trade this responsibility off to someone else if I find myself getting swamped, but for now I'm going to close this issue and get working on how I'm going to actually pull the data into the main sheet!
