Update the beta docs to be the latest docs

Description

Docs need to be updated after the Mainnet migration:

• Update the versions in antora.yml
• Update all related links in the documentation
• Add Service docs link to nav.adoc

Affected branch / URL

• Create docs-lisk-v3 branch from main and adjust antora.yml
• Merge development into main and adjust antora.yml
• Update antora.yml of docs-core-v3 and in the Core repo
• Update antora.yml of docs-sdk-v5 and docs-sdk-v6
• Update antora.yml of docs-service-v0.6 and in the Service repo
