Like in TachiJ2k, I should more options when selecting a chapter within a series, as can be seen in the image below.

I'm not sure what you want here. These features are in kuukiyomi. Only thing that is different that it doesn't have the text.
But maybe I misunderstand something. If so then please give me further information on this

There should be an option that would allow me to select a range of chapters to be either marked read or unread.
And another option that would allow me to select all the chapters below the selected chapter to be either marked read or unread.

There already is. Simply select a chapter and then long click another chapter that is above or under the selected one.
