Make example files compatible with Windows Machines

The grib reading engine pynio in examples is causing issues with windows. If we could get a different grib reader to work with xarray, windows users could access the library. The [pynio](https://github.com/NCAR/pynio?tab=readme-ov-file) library hasn't been maintenanced in several years. It might be advantageous to leverage the hyriver [pynldas2](https://github.com/hyriver/pynldas2)' library, which produces xarray` objects.
