Rename median asset keywords to better indicate year range

We should probably make the source keywords more explicit and include the start and end years that were used. Something like change "DAYMET_MEDIAN_V2" to "DAYMET_V3_MEDIAN_1980_2018" (the V3 was added to make it obvious that we are using DAYMET v3 not DAYMET v2).

Longer term we will probably want to rename the assets themselves to reflect these name changes but that will take more time.
