Use a demo collection managed by OTA in testing workflow

In the test workflow, instead of using contrib-declarations, use a simple demo collection fully managed by OTA team.
It will allow us to not only test the schema validation command but also the full validation command.
This would have been useful in #996 to detect that the command was broken.
