Pedal: Consider menu options for setting pedal output modes

Current pedal output is a fixed 0-10v Unipolar signal.

Consider adding convenience options for:

  1. -5-5v bipolar
  2. 0-127v MIDI Value
  3. Ranged values for matching with various MIDI switch-type signals. 0/64/127, or the values expected by octave switch (60 is the midpoint).
  4. Gate or Trigger at some transition.
