change statistics tables to logged

I was aware unlogged tables could lose data after a bad shutdown, but I wasn't aware is that the entire table can be lost after a bad shutdown!
This happened to us. Unlogged tables are clearly not worth the performance.
- Alter all unlogged tables to logged
