[enh] add support for multiple mock configs

[pcfe]

currently mock is called without the -r flag. This means that only the release that the symlink /etc/mock/default.cfg points to.

change the scripts to have one more param in the jenkins job so as to be able to select the mock config (e.g. rhel-6-x86_64, rhel-7-x86_64)
