Improve default social media metadata image

In the PR ScryEngineering/CPS_gatsby#149 we have a quick workaround for the image dimensions being wrong which was just by re-scaling the canvas size default image. A better default image would take into account the newer 2:1 dimensions instead of just adding a lot of whitespace to make it 2:1
