Publish docs to a production site: docs.stanzasys.co (and/or docs.stanzasystems.com)

Currently docs are published via vercel to docs.dev.getstanza.dev which is our dev domain.

Production publication should go to docs.stanzasys.co (our production domain). This should be setting up a production deployment in vercel and merging main to prod in the docs repo after setting up the appropriate dns alias.
