I had to change the css for the font color to black using the large menu.

That's the correct approach, more specifically by adding the color value to this class " #gnomenuMenuMainbox #searchEntry { " for the desired size gnomenu.css located in the extensions theme folder. By default the extension is set to adopt the values from your gnome shell theme.
I also see you have since managed to sort this out, good to know.
