Reorganise Gemfile

I'd like the Gemfile to be a bit more organised. Right now the "development"/"deployment" groups aren't very accurate descriptors, as many of the development gems are actually required for deployment as well.

I've simplified the groupings and removed a lot of gems. Considering this closed.
