Update `minimatch` to Latest and Update Import

Current behavior
✏️ An TypeError is happening when running npm run start with an override of webpack in version 5.79.0 and minimatch in version 9.0.0.
minimatch has updated their code from not using defaults anymore and importing minimatch is now done through destructuring from an exported object.
Expected behavior
Webpack to run successfully when running npm run start.
Steps to reproduce the issue
Use latest webpack version 5.79.0 and latest minimatch in version 9.0.0 in an override property in package.json.
