Feature Request: Be able to choose wine version

It would be cool if you could specify which wine executable to use (provide path to the executable/folder or something)
Could be an option in the config.yaml
Ex: I would like to be able to use the wine-GE-proton and not my system wine version
Something even crazier would be auto-detection of wine versions you have on your system
by default use system wine
