Use official Elasticsearch images

Elasticsearch images that were in the Docker library have been deprecated in favor of official images maintained by Elasticsearch team.

• Update compose file of pim-community-dev and pim-enterprise-dev (master branch only) to use these new images
• Update the Akeneo CI => This will need to wait for the CI v2.
• Update documentation
  • with links to official documentation
  • Needs to update mmap counts (this is to be done on Akeneo documentation too)
