Sure. GPLv3 is fine with me. Commercial clause (com use OK as long as source access is provided) should cover use by Coursera. Course content might be covered by different licenses, hence should be distributed separately as per @SashaCrofter, "We'll distribute courses as packages containing everything they need to function, barring the swirlypy dependency."
