Example app not working on macOS 13 Ventura, Xcode 14, iPhone with iOS 16

Describe the bug
I am trying to run the the example app on device but I am failing with error Failed to build iOS project and a lot of errors like warning: The iOS deployment target 'IPHONEOS_DEPLOYMENT_TARGET' is set to 10.0, but the range of supported deployment target versions is 11.0 to 16.0.99

To Reproduce
Steps to reproduce the behavior:

1. In the project folder I run yarn
2. yarn example ios --device iPhonezee (my iPhone device)

And I get errors regarding the pod dependencies minimum version:

$ yarn --cwd example ios --device iPhonezee
$ react-native run-ios --device iPhonezee

NOTE: if I run on the simulator with yarn example ios it works as expected.

Expected behavior
The example app should run on device.

The real error is:
