Fix colors in `plot_sim_emotions` + switch to `ggpubr`

Different colors in legends to the colors in the plot. Switch to ggpubr and use consistent color scheme for everything. Hand-picked for up to 8 emotions, generated for 8+ simulated observed scores.

I left base R plotting for now. I will change it to ggplot only if there is need to bump this function to be main plotting methods for both simulated and detected emotion time-series.
