[META] Use GitHub Projects as a “layer” system to categorize issues.

We could use labels like 'Meeting#1', 'Meeting#2', etc., to tag issues that we plan to discuss in a call. Additionally, another label could indicate the status of an issue in a Kanban format, such as 'draft', 'title-verified', 'body', 'solved', and so on.
We need “write” permission to be able to create projects or assign issues to projects.

Let's make a list of category tags and assign them colors etc here, or in a dedicated issue.
It shouldn't be too crazy at the top level, needs to be intuitive and easy to maintain. But for example "tokenomics" is a clear one, and we can have "tokenomics/xyz" if we need to branch out.
