Switch to using alpine or some other container distro

Ubuntu is great and all, but huge images are huge.

nginx has been alpine'd for a while now, just saw that the PHP FPM images are coming out in alpine flavours now too: https://hub.docker.com/_/php/

Looks like it's time!
