Update docker images and provide more flexibility in selecting the image

The currently used docker images haven't been updated in 2 years and don't look to be maintained. Since that time Amazon has released images into public ECR.

There are two things that would be ideal here:

  1. Update the current docker container to use Amazon's docker containers
  2. Provide a parameter or override property so that someone can use their own registries

Going to close this one for now. We updated the docker image and the flexibility can be based on future need.
