I'm using the version hosted by t2bot. Don't know if they have encrypted rooms disabled or if the bot just doesn't support it. But would be a great feature because I don't want to not use encryption on my rooms.

Hey, this bot doesn't support e2ee and I don't plan on adding native support for it anytime soon. I'd suggest you ask t2bot if they can have the bot talk to the homeserver through pantalaimon which would give it e2ee capabilities.
