Refactor test workflows, coverage and codecov integration

The coverage reports are not 100% accurate and could be improved with a little bit of tweaking.
This can be done with a new cornflow that mixes all the test regardles of where the changes are made, that way we can test that the full environment works or by adding test in some key areas (execution endpoint in cornflow-server)
