Remove email from the verified person credentials

Create a new verified person schema version without email address and start issuing credentials with that new schema for BC and NS (so new cred defs), and update the identity kit demo to use.

Ideally, keep accepting the old schema and accept the new one as well. Eventually we'll get rid of both.

Make sure that with the BC Services Card flow there is no data to be altered.
