I'm not sure how this would work.
I know in PFRPG NPCs sometimes have ammo listed in their "Treasure" field like "Arrows (20)" but it's not always there.
Perhaps a new NPC sheet tab for ammo tracking?
This starts to feel like an ever-growing task!

It might be useful to just have a shot counter for each NPC.
