Docker Image includes Jupyter Lab

Is your feature request related to a problem? Please describe.
With only Jupyter Notebook, it's more difficult to develop and test report changes than if we had Jupyter Lab, since Lab offers various ui and quality of life improvements.
Describe the solution you'd like
Jupyter Lab added to docker image, with docs updated to reflect using Lab instead of Notebook.
Describe alternatives you've considered
Continuing to use Jupyter Notebook, which is less effective for me.
Additional Context
Switching to Lab would bring us into closer alignment with the analytics workflow, since that's what analysts are familiar with working with on the Hub.
