Update cert to use SHA-256 or SHA-3

SHA-1 has "can" already be "broken" so it would be good to stay with the times and upgrade the cert :)

This is a self-signed certificate for use in development; it doesn't matter. If you feel strongly about it, you can create and use your own certificates via --cert and -key.
