Remove 1.7 from bundle integration tests

Context
CKF 1.7 is still listed as a bundle to be tested, but it will fall out of support when CKF 1.9 is released, therefore we need to remove all traces from the testing framework.
What needs to get done
Remove 1.7 from the Github workflows and integration test files
Definition of Done
CKF 1.7 is not included as part of the automated integration tests.
