refactor selfhosted documenation section

Problem?

Even though we have documentation for various installation, features and multiple configuration options, it seems all over the place. Some pages/features are hard to find.

Describe the solution you'd like

• The left nav bar guides the user in the self-hosted page. Simplify and make it more legible.
• Group similar sections under the same parent. eg: upgrades for all installation types together
• Have pages for common issues/gotchas.
• Have runbooks for processes that are expected to be completed by user.
• Right now we are only nesting two levels deep in the left side bar. We could have more top-level parent sections. This could make things more intuitive.
