Need Workstation on Apple M1

Describe the Enhancement:

It would be useful to have Chef Workstation available for install and execution (in native mode, not Rosetta) on the Apple M1 platform. This will allow all the interconnected packages, bundles and libraries function in native mode.

Presently, Chef Habitat is not supported on Apple M1. The Habitat package can be excluded when bundling together all other packages that are part of Workstation, specifically when compiling the M1 build, until Habitat supports M1 natively.
This is now supported via habitat-sh/habitat#8334

Describe the Need:

DevOps engineers who need to set up or update their Chef Infra configuration can do so from an Apple M1 system.

Current Alternative

Use an x64 system instead.

  1. components that need to be supported, resp. build pipelines to be updated with this platform. e.g. workstation-app
  2. update omnibus platforms list to include aarch64
