zcat step fails on OS X

Currently the illumina pipeline uses zcat in the trimming command, but zcat doesn't work correctly on OS X by default. I think it can be swapped out for gunzip -c to fix it. I understand if you don't want to fiddle with this if you're mainly going to be running on Linux systems.
