Update ibc-go tutorials to v8.0.0

We just released ibc-go v8.0.0 so it would be good to check if the tutorials needs updating with this new release.

Hey the sdk team will be hosting tutorials we write and maintain here. Not sure when we will do one with ibc included. The developer portal tutorials migrated to another repo, this issue may be better suited there
