[Bug] Current plugin dependencies not tracked in `docker/configs/composer.json`

Description

Currently known plugin dependencies are not captured in:

docker/configs/composer.json
docker/configs/composer.lock

docker-compose.yml does not mount relevant files.

Resolution

I would be interested in resolving this bug.
