Escape sequences in Markdown not showing up properly

For the second bullet point, a few of the escape sequences aren't showing up correctly. The markdown looks ok to me, so I'm unsure what the problem is.

Clearly a case where gitbook and GitHub disagree on how to render! The PDF also looks correct...
