Should pull multiple data points from a set timeframe for time series analysis

Still figuring out the best way to organize this data, I did get historical data to make a nice dataframe but the instruments are bad for a dataframe format because they're 1 row and then column headers, i'll be changing the types soon so maybe I can find a workaround
