In the shipping address there are too many breaks if no telefone or other custom attributes are not included:

That's not related to Clean Checkout, persistency is buggy in Magento 2 and it sometimes loses part of your address in the payment step.
See for example magento/magento2#12572 - but there are a dozen more similar bug reports. You could try disabling persistence from the backend, but I can't guarantee it will work. Definitely a core bug though.

Address templates are provided by core Magento, this should provide you with more information on how to modify address templates.
