Can't continue grabbing virtual throttle and joystick

If you press and release the grip button quickly you will continue grabbing until you press and release the grip button again.
Maybe it's just me being too stupid, but I can't seem to find the timing to achieve continue grabbing the virtual throttle and joystick. I'm using the Quest 2 + Touch Controllers.
Oh, looks like some of the documentation on the README is old. Those are instructions for the Vive wands, which only have a basic button in the middle of the controller.
The Oculus Touch controllers have a better grip button, so the default bindings are to hold the grip button to grab.
Ah, I see. If it's not too much of an effort I'd love to have it as a feature still, as it's kinda annoying when navigating in menus (OT: what's the reason for no POV on the Thrust?) and I'll lose grip and have to re-establish it by looking towards to joystick, because then the menu on the left dis- and reappears again before I can continue with my task.
Maybe this will not be an issue once I'm more provident but at least for now I keep losing grip while panicking which led to not being able to correct course fast enough twice now already.

You can rebind the controls if you want. Use the Edit button in the controls panel to open SteamVR's Input bindings. If you swap the "Grab (Hold Only)" bindings with "Grab (Toggleable)" the grip buttons will behave like they do on the Vive controllers.
