Enable Istanbul Coverage with this plugin as well

With V0.22.x, vitest started supporting istanbul as coverage tool.
I will have to check if this action actually also works with istanbul.
I suppose it would, as the generated JSON reports should remain the same - but I can not say with all certainty.

Just tested it - and it works with istanbul and v8.
