Cannot edit libreoffice in the virtual machine

LibreOffice isn't installed -> difficult to work in the VM directly.
Also need to provide better instructions on how to get plots (better than screenshots).

libreOffice can be installed via yum
sudo yum install libreoffice-writer libreoffice-calc -y

I would suggest to add this to the install script.
